Sister Parker Chicken

We lived in Hawaii for several years, and aside from the pristine beaches, and perfect weather, one of my favorite things about that time was the food! There was delicious food at every event, every occasion. Hubby came home from a church meeting one evening and told me about this dish. I’m sure it has a name, but it has long been forgotten in favor of Sister Parker, who first shared this recipe with him. In fact, he was so enamored by this dish, that he had to video Sister Parker telling him how to make it. This has lived in our family menu rotation for many years now and has been shared and re-shared with many, many fans.

Sister Parker Chicken

The beauty of this recipe is its simplicity. So much flavor packed into so few ingredients. You can use fresh or frozen chicken, boned or boneless... but the most flavor is achieved with bone-in, skin-on chicken thighs.

Ingredients

  • chicken thighs
  • 1 cup sugar
  • 1 cup mild soy sauce, also called shoyu (I use Aloha brand)

Instructions

Slow Cooker Instructions

  • Dump chicken in slow cooker. I use frozen bone-in, skin on chicken thighs.
  • Pour sugar over chicken. Pour soy sauce over chicken.
  • Put the lid on the slow cooker and set on low for about 6 hours. (high 3-4 hours)
  • Serve with rice.

Oven Instructions

  • Preheat oven to 250 degrees.
  • Place chicken thighs in a large baking dish or deep foil baking tray.
  • Pour sugar and soy sauce over chicken.
  • Bake for 3-4 hours at 250 degrees.
