Having lived in India and truly loving the food there, I cringe to call this “Indian” food, but this is still a super easy, super inexpensive, super satisfying dish.

Quick Chicken Curry

  • 3 cups chicken, cooked and cubed
  • 1 cup onion, diced
  • 1 clove garlic, minced
  • 5 tbsp butter
  • 1/4 cup flour
  • 2 1/2 cups milk
  • 3/4 cup cream of coconut
  • 1 tbsp curry powder
  • 1 tbsp chicken bouillon crystals
  • 1/4 cup lemon juice


  • In a large skillet, melt butter over medium heat. Cook the onion and garlic in the butter until soft. 
  • Stir in the flour.
  • Add the milk gradually, stirring until mixture is smooth.
  • Add the cream of coconut, curry powder, and chicken bouillon. Stir until the mixture thickens. Add the lemon juice.
  • Reduce heat and simmer for 10 minutes more. 
  • Serve over rice.
