Pressure Cooker Roast

This fall apart roast is a delicious option for a winter evening or Sunday dinner. And with the advent of the Instant Pot it is even simpler.

Ingredients

  • vegetable oil
  • 3 lb. beef roast (I use chuck)
  • potatoes (whole, scrubbed)
  • 1 onion (whole, peeled)
  • carrots (whole baby or chopped large)
  • seasoned salt
  • 1 1/2-2 cups water

Instructions

Electric Pressure Cooker

  • Turn on pressure cooker to SAUTÉ. Add oil to bottom. 
  • Rub seasoned salt over roast.
  • Sear roast for 1 minute on all sides. Hit CANCEL.
  • On top of the roast, at the potatoes, onion, and carrots.
  • Add the water. Put lid on pressure cooker and set to high pressure for 50 minutes.
  • Quick release the pressure.
  • Serve the roast with the crusty bread making sure to serve the delicious juices as a gravy.

Stove Top Pressure Cooker

  • Follow the same instructions as above, but cook over high heat until pressure value pops up. Then reduce to medium-high and cook for 45-60 minutes.
