Poppy Seed Chicken Casserole

This recipe came from one of my college roommates. The six of us used to rotate cooking throughout the week. I’m a big fan of poppy seeds, and while this is definitely not a low fat meal, it is definitely not low on taste.

Poppy Seed Chicken Casserole

  • 2-3 chicken breasts
  • 18 oz. sour cream
  • 1 can cream of chicken soup
  • 1 1/2 cup Ritz crackers
  • 1 tbsp poppy seeds
  • 1 stick butter, melted
  • 1 1/2 cups rice


  • Preheat oven to 350 degrees.
  • Cook chicken until no pink remains, and cube into bite–sized pieces. 
  • Cook rice. In a medium pot, bring 3 cups of water to a boil. Add the rice. Cover and reduce heat to low. Simmer for 17 minutes. Remove pot from heat and let sit, covered, for an additional 5 minutes. 
  • Place rice as the bottom layer in a 9x13 pan. Sprinkle chicken over the rice layer. 
  • In a small bowl, mix the sour cream and cream of chicken soup. Pour over chicken.
  • Crush the crackers and mix with the melted butter and poppy seeds. Sprinkle this mixture over the chicken layer.
  • Bake at 350 degrees for 30 minutes.
