Healthy Taco Soup

Ingredients

  • 1/2 medium onion, chopped
  • 16 oz. chicken, precooked and shredded
  • 1 can no salt added diced tomatoes
  • 1 can low sodium black beans
  • 1 can no salt added corn, drained
  • 1 can no salt added tomato sauce
  • 3 tbsp light sour cream
  • 1 pkg. low sodium taco seasoning, divided

Instructions

  • In a medium skillet, sauté the onions until tender.
  • Add the precooked, shredded chicken, and half of the packet of taco seasoning. Stir to combine with the onions and cook for 2-3 minutes.
  • In a separate pot, add the diced tomatoes, black beans, corn, tomato sauce, sour cream and the other half of the taco seasoning packet, and bring to a boil. 
  • Reduce heat to low, add chicken and onions and simmer for 30-45 minutes.
