Easy Chicken Enchiladas

  • 1 onion, diced
  • 1 can diced green chilies
  • 1 can sliced black olives
  • 1 pint sour cream
  • 1 can cream of chicken soup
  • 2 boneless, skinless chicken breasts, cubed
  • 1 pkg. flour tortillas
  • garlic powder
  • cumin
  • chili powder
  • 8 oz. cheese, Mexican blend, shredded


  • Preheat oven to 350 degrees.
  • In a large frying pan, sauté chicken in a bit of oil with garlic powder, cumin, and chili powder to taste. 
  • In a large bowl, combine onion, olives, chilies, chicken and more spice.
  • In a smaller bowl, combine cream of chicken soup and sour cream.
  • Combine half of the sour cream and soup mixture to the chicken. 
  • Place 1 tortilla on a plate, add chicken mix and roll up the tortilla. Place the tortilla seam side down in a 9x13 baking dish. Repeat with all tortillas.
  • Cover tortillas with remaining sauce and cheese. Bake at 350 degrees for 30 minutes.
  • Serve with rice.
