Chicken Enchilada Casserole

Ingredients

  • 2 cups chicken, cooked and cubed
  • 1 cup chicken broth
  • 1 can cream of chicken soup
  • 1 4-oz. can chopped green chilies
  • 1/2 medium onion, diced
  • 1 clove garlic, crushed
  • 12 flour tortillas, torn into pieces
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup cheddar cheese, shredded

Instructions

  • Preheat oven to 375 degrees.
  • In a medium bowl, combine the chicken, broth, cream of chicken soup, green chilies, onion and garlic. 
  • In a 9x13 pan layer 1/3 of the tortilla pieces, chicken mixture and cheese. Repeat layers. 
  • Bake at 375 degrees for 25-30 minutes.
