Blueberry Buckle

This dessert speaks comfort to me. I absolutely loved when my mom made this. The warm crumbly blueberry cake topped with chilled half and half just melts in your mouth.

Blueberry Buckle

Ingredients

  • ¾ cup butter
  • 1 cup sugar
  • 1 egg
  • 3 cups flour
  • 3 ½ tsp baking powder
  • 3/8 tsp salt
  • ¾ cup milk
  • 1 pint blueberries, rinsed

Topping:

  • ¾ cup sugar
  • ¾ cup flour
  • ¾ tsp cinnamon
  • 3/8 cup butter

To Serve:

  • half and half

Instructions

  • Preheat oven to 350°.
  • In a medium bowl, cream together butter, sugar, and egg.
  • Add the flour, baking powder, salt, and milk. Beat until fluffy.
  • Pour into a greased 9x13" pan. Sprinkle blueberries on top.

Topping:

  • In medium bowl, combine sugar, flour, and cinnamon. Cut in butter. Sprinkle topping mixture over blueberries.
  • Bake at 350° for 45 minutes.
  • Serve warm with half and half to pour over.
