Salad Ingredients

  • 1 15 oz. bag cheese-filled tortellini pasta (or any other pasta)
  • 16 oz. grape tomatoes, halved
  • 1 yellow bell pepper, chopped bite-sized
  • 1 red bell pepper, chopped bite-sized
  • 1 English cucumber, quartered, then sliced
  • ½ medium red onion, diced
  • ½ cup kalamata olives (or black), halved or sliced
  • 4 oz. sharp cheddar, grated or cubed
  • 1 lb bacon, cooked crisp and crumbled

Easy Ranch Dressing Ingredients

  • ½ cup mayonnaise
  • ½ cup sour cream
  • ½ cup milk
  • 3 tbsp dry ranch dressing mix
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp pepper

  • In a large pot, boil water and cook pasta according to the package directions. Do not overcook. Drain and set aside.
  • In a medium bowl, combine mayonnaise, sour cream and milk. Add ranch dressing mix, lemon juice, garlic and pepper. Mix well. Refrigerate until ready to dress the salad.
  • In a large bowl, toss cooked pasta with a bit of dressing to prevent sticking.
  • Add tomatoes, peppers, cucumbers, red onion, olives, cheddar and bacon. Toss to combine.
  • When ready to serve. Toss with remaining salad dressing until well coated.

This salad is just as delicious the next day as it is the day it is prepared.
In my opinion, any pasta would work well with this salad. Cheese tortellini is one hearty-bite version. You could easily use bowtie, or any other pasta to your liking.
Cheese is also an optional ingredient.
